3/4 cup sugar
16 tbsp unsalted butter, softened
½ tsp fine sea salt
2 large egg yolks
1 1/2 cups white whole wheat flour
1/2 cup hi maize
Split vanilla beans & scrape pulp. Add to sugar and rub together until combines
Beat butter and vanilla sugar until soft and whipped very well.
Add salt then egg yolk until combined.
Turn off your mixer and add flour and hi maize. Turn mixer on and mix until just combined. Do not over mix.
Roll dough into logs. Refrigerate for an hour then roll the logs in raw sugar and either cut and bake or freeze for up to 1 year.
